5lbs duck and a package of saffron rice

  • Cook a package of saffron rice.
  • Mix: 2 tsp salt, 2 tsp pepper, 1 tsp ginger, 1/2 tsp Chinese 5 spice
  • Put some inside the cavity.
  • Stuff cavity with rice.
  • Sew the opening shut (a sail needle and sail thread work very nicely)
  • Rub outside with spice mixture.
  • Toss in oven at 375° for 13/4 hours.
  • Mix 1/4 cup honey and 2 tablespoons soy sauce
  • Paint honey/sauce mix on bird (1" chip brush works great) and cook for another 15 - 20 min.

Eat like you are a starving hyena.
