That's a Great Egret (Casmerodius albus) - and they were hunted to near extinction (along with most other things in the Everglades) in the 1920's and 1930's. When they finally clamped down on the slaughter, an ounce of those frilly feathers (about 12 adult birds) was selling for $82 - more than gold at the time.
